Fine Carrot Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grate the carrot and mix it with the crumbled bread.

  3. In a bowl, combine the egg yolks, egg whites, and milk.

Make the pudding

  1. Add the melted butter, white wine, orange-flower water, nutmeg, and sugar to the mixture.

  2. Stir everything together until well combined.

  3. If too thick, add more milk to reach a moderate consistency.

  4. Line a baking dish with puff pastry and pour the mixture into it.

  5. Bake for 1 hour.

  6. Serve with grated sugar on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrot
Provides bulk, sweetness and moisture to the pudding base.
White bread
Absorbs liquid and gives the pudding a soft, light body.
Egg yolks
Enrich the custard and help it set into a tender texture.
Egg whites
Add structure and lift, helping the pudding set lightly.
Milk
Adds moisture and creaminess to the custard base.
Butter
Adds richness and fat, softening the crumb and adding flavour.

The step that matters

If too thick, add more milk. Bread keeps soaking up liquid, so the mixture can turn stiff. Adding milk to a moderate consistency keeps the pudding moist and evenly set rather than dense and dry after baking.
