Why it works: Orange and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓

Fine Light Biscuits

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. In a bowl, combine the yolks of 5 eggs, crisped orange flowers, and finely shredded lemon peel.

  2. Add ¾ pound of fine loaf sugar and beat until the sugar dissolves and mixes well with the eggs.

  3. In a separate bowl, beat the whites of 10 eggs until frothy.

  4. Gently mix the frothy egg whites into the sugar and egg yolk mixture.

  5. Gradually fold in 6 ounces of flour until just combined.

Shape and bake

  1. Spoon the mixture into oblong shapes on white paper and dust with fine sugar.

  2. Bake in a preheated oven at 350°F (175°C) until golden brown.

Egg and flour barely smell alike, yet cooks put them together in 106,462 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to froth, they trap air that lightens the biscuits and helps them rise.
Egg yolks
Enrich the batter and add richness and tenderness to the crumb.
Fine loaf sugar
Sweetens the batter and dissolves into the eggs, helping create a smooth, fine texture.
Flour
Provides structure so the set batter holds its shape as it bakes.

The step that matters

Folding in the flour. Folding gently keeps the air trapped in the whipped egg whites. Overmixing deflates the foam, leading to flatter, denser biscuits.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, lemon, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Orangethe original
  4. Blueberryfits about as well

Fit is the average pairing score against egg, sugar, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
