Ingredients

Directions

The book says “a gentle oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cover your dish with a thin layer of puff pastry.

  3. Slice the candied orange peel, lemon peel, and citron thinly, and lay them over the bottom of the dish.

Make the custard

  1. Beat the egg yolks and egg whites together.

  2. Mix in the sugar and melted butter until well combined.

  3. Pour the mixture over the sweetmeats in the dish.

Bake

  1. Bake for about 1 hour until set.
