Fried Calf’s Liver, WITn Fine-herbs Sauce

  1. Cut the liver into neat scallops about ¼ inch thick.

  2. Season with pepper and coarse sea salt.

  3. Fry in a sauté pan with a little clarified butter until browned.

  4. Pour off the grease, add fine-herbs sauce, and simmer for 3 minutes.

  5. Serve immediately.
