  1. Insert a small piece of bone into each cutlet.

  2. Coat the cutlets with Allemande sauce, then dip in beaten egg, and bread-crumb them again.

  3. Heat clarified butter in a sauté pan.

  4. Fry the cutlets in the sauté pan until done.

  5. Glaze the cutlets lightly and arrange them alternately on a serving dish.

  6. Fill the center with white Toulouse ragout and pour Espagnole half-glaze around the entree.
