Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Provides the chewy body and bulk that make the soup thick and hearty.
Heavy cream
Adds fat for a smooth, rich texture and a creamy mouthfeel.
Butter
Softens the onion, carrots and celery and adds a rich, savoury flavour.
Onion
Builds a sweet, savoury base flavour as it softens in the butter.

The step that matters

Stir in heavy cream and season with salt to taste. Cream added to a boiling soup can curdle or separate, so it should be stirred in off the heat or at a gentle simmer. Salt is best adjusted at the end, since the flavours concentrate as the soup reduces.

Swap the onion

How well each one fits the dish's main ingredients (barley, butter, carrot, celery, thyme, cream):
