Fine Light Biscuits

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a bowl, combine the egg yolks, orange flowers, lemon peel, and sugar, then beat until the sugar dissolves.

  2. In a separate bowl, beat the egg whites until frothy, then mix them with the sugar mixture.

  3. Gradually fold in the flour until well combined.

Bake and cool

  1. Prepare small trenches from white paper and grease them with hot butter.

  2. Spoon two tablespoons of the mixture into each trench and dust with fine sugar.

  3. Bake in a 350°F (175°C) oven until golden brown.

  4. Remove from the paper and let cool on a sieve in a dry place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and tenderness, and help bind the batter together.
Egg whites
Beaten to a froth, they lighten the batter and give the biscuits their airy structure.
Flour
Provides structure so the biscuits hold their shape once baked.
Fine loaf sugar
Sweetens the biscuits and helps stabilise the beaten egg whites.

The step that matters

Folding in the flour. Folding gently keeps the air beaten into the egg whites. Stirring vigorously deflates the foam, which leads to flat, dense biscuits.

Swap the orange

How well each one fits the dish's main ingredients (egg, lemon, sugar, flour, butter):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against egg, lemon, sugar, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
