Ingredients

Directions

Make the cream

  1. Boil the cream with the thin rind of the lemon.

  2. Stir the mixture until nearly cold.

Combine and chill

  1. In a serving dish, combine the strained lemon juice with enough sugar to sweeten the cream.

  2. Pour the cream into the dish from a height, moving it around to mix with the juice.

  3. Refrigerate for at least 6 hours before serving, preferably overnight.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, thick body to the dessert.
Lemon juice
Provides the sharp, tangy acidity that defines the dessert's flavour.
Sugar
Sweetens the cream and balances the sourness of the lemon juice.
Lemon rind
Infuses the cream with aromatic lemon oils while it heats.

The step that matters

Cool the cream before mixing in the lemon juice. Acid from lemon juice can curdle or unevenly thicken warm dairy. Stirring the cream until nearly cold first, then pouring it from a height, blends the juice in gently and keeps the texture smooth.

Swap the lemon
