Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raspberries
Provide the main flavour and juice that colours and scents the cream.
Isinglass
Acts as a gelling agent that sets the cream into a firm shape when chilled.
Cream
Supplies fat for a rich, smooth texture and body.
Sugar
Sweetens the dish and draws juice out of the raspberries.
Milk
Dilutes the cream and helps prevent curdling when mixed with the juice.

The step that matters

Adding milk to the raspberry juice and cream. Acidic raspberry juice can curdle dairy when combined directly, so milk is added to the mixture to reduce the risk of curdling.
