To Pot Lobsters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Half boil the lobsters, then remove the meat and cut it into small pieces.

  2. Season the meat with mace, white pepper, nutmeg, and coarse sea salt.

  3. Press the seasoned meat into a pot and cover it with butter.

  4. Bake in a 350°F (175°C) oven for 30 minutes.

  5. Once cooled, take the lobster out and place it into pots with some of the melted butter.

  6. In a mortar, beat the remaining butter with some of the lobster spawn.

  7. Mix the colored butter with enough to cover the pots, then strain it.

  8. Add cayenne pepper if desired.
