Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the cream as it cools in the mold.
Cream
Provides richness and fat, giving the set dessert a smooth, creamy texture.
Raspberry juice or syrup
Adds raspberry flavour, colour and sweetness to the cream.
Sugar
Sweetens the cream and balances the tartness of the raspberry juice.
Brandy
Adds aroma and a warm flavour note to the raspberry cream.

The step that matters

Whisking in the brandy until three parts cold. The cream must be cool and partly thickened before whisking, or the mixture may not hold air or set evenly. Adding warm liquid too early can keep the isinglass from firming properly in the mold.
