Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the egg yolks, grated biscuits, pounded almonds, orange-flower or rose-water, nutmeg, sugar, grated lemon peel, and currants until well combined.

  3. Fill patty pans with the mixture.

  4. Just before baking, add a tablespoon of brandy to each pan.

  5. Cover the pans with thin light paste before pouring in the mixture.
