Baked Mackerel

Oven, in the book's wordsA slack oven

Ingredients

Directions

The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Wash and clean the mackerel, removing heads, tails, and fins.

  2. Gut the fish and cleanse the insides, preserving the roes.

  3. Sprinkle the insides with coarse sea salt and black pepper.

  4. Season the outside with equal parts black pepper, powdered allspice, and salt.

Bake

  1. Place the mackerel side by side in a baking pan.

  2. Pour in equal parts cold water and vinegar to cover the fish.

  3. Cover the pan with double-folded white paper.

  4. Bake in a 300°F (150°C) oven for 1 hour.

Vinegar
Adds acidity that brightens the fish and helps balance its richness.
Cold water
Mixed with the vinegar to create moist, gentle cooking liquid around the fish.
