Fruit Puffs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the puffs

  1. Roll out the puff pastry to ¼ inch thick and cut into squares.

  2. Place a small amount of raspberry jam or other preserved fruit on each square.

  3. Fold the pastry over diagonally, dampen one edge, and press the edges together.

  4. Place the puffs on a baking sheet lined with paper.

Glaze and bake

  1. Beat the egg white until stiff.

  2. Brush the stiff egg white over the tops of the puffs using a pastry brush.

  3. Sift white sugar over the egg wash.

  4. Warm the butter.

  5. Mix in the egg yolk.

  6. Brush this mixture over the tops of the puffs.

  7. Sift sugar on top.

  8. Bake in a preheated oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the flaky, layered shell that puffs and browns in the oven.
Raspberry jam or other preserved fruit
Provides the sweet, fruity filling inside each puff.
Egg white
Whipped stiff and brushed on, it helps the sugar stick and gives a crisp, glossy top.
Egg yolk
Mixed with butter for the glaze, it adds richness and promotes even browning.
Butter
Adds fat and richness to the glaze, contributing flavour and browning.

The step that matters

Sealing the edges. If the folded edges are not dampened and pressed firmly, the filling can leak out during baking and the puffs may open unevenly.

Swap the walnut

How well each one fits the dish's main ingredients (raspberry, egg, sugar, butter):

  1. Almondfits better
  2. Pecansfits better
  3. Pistachiofits better
  4. Walnutthe original

Fit is the average pairing score against raspberry, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
