Why it works: Horseradish and vinegar are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 2,609 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Excellent Horseradish Sauce
Ingredients
Directions
Prepare
Wash and wipe the horseradish stick, then scrape off the outer skin.
Grate the horseradish as finely as possible.
Make the sauce
In a bowl, mix the grated horseradish with salt and cream, stirring briskly.
Add the vinegar, including chili vinegar if desired.
To heat the sauce, place it in a clean saucepan over low heat, stirring continuously until just before simmering. Do not let it boil.

What each ingredient does
- Horseradish
- Supplies the sharp, pungent heat that defines the sauce.
- Cream
- Adds moisture and richness that soften the horseradish's bite.
- Vinegar
- Adds acidity that brightens the flavor and helps preserve the sharp taste.
The step that matters
Heating the sauce without boiling. Boiling can cause the cream to separate and curdle and can dull the volatile compounds that give horseradish its pungency. Heating gently over low heat, stopping just before a simmer, keeps the sauce smooth and sharp.
Swap the horseradish
