To Roast Ducks

Ingredients

Directions

Prepare the ducks

  1. Remove the heads and necks from the ducks, leaving the feet on.

  2. Hold the ducks in boiling water for a few minutes to loosen the skin, then peel it off.

  3. Wash the inside of the ducks with water and wipe the outsides.

  4. Season the inside with parboiled onions, minced sage, salt, and pepper, or leave unstuffed if preferred.

  5. Cut off the pinions at the first joint and truss the feet behind the backs.

Roast and serve

  1. Spit the ducks firmly and roast them over a brisk fire, basting constantly.

  2. When the breasts are plumped and steam draws towards the fire, serve quickly with brown gravy.

What each ingredient does

Ducks
Provide the meat and fat that form the main body of the dish.
Onions
Add moisture and a mild, sweet aroma to the cavity while the duck roasts.
Sage
Adds an earthy, aromatic herb flavour that complements the rich duck meat.
Butter
Adds richness and fat that promotes browning and a golden skin.

The step that matters

Basting constantly over a brisk fire. Duck skin is fatty and can dry or scorch unevenly over high heat. Constant basting keeps the surface moist and helps it brown evenly while the fat renders.

Swap the onion

How well each one fits the dish's main ingredients (sage, pepper, butter):

  1. Capsicumfits better
