Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
A Good Sponge Cake
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Grate the rind of the lemon and mix it with some lumps of sugar, then crush the lumps to powder.
Measure out enough sugar to equal the weight of the eggs in their shells and add the powdered lemon sugar.
Make the batter
Break the eggs one by one, separating the whites from the yolks.
Beat the yolks in a large bowl for 10 minutes, then gradually add the sugar mixture and beat well.
Whisk the egg whites until they form a solid froth, then gently fold them into the yolk mixture.
Sift the flour over the mixture and gently stir it in without beating.
Bake
Pour the batter into a well-buttered mold and bake in a moderate oven at 350°F (175°C) for 1 hour and 15 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whipped whites and beaten yolks create the airy structure that lifts the cake.
- Sugar
- Sweetens the cake and helps stabilise the whipped egg foam.
- Flour
- Provides the starch and gluten that set the cake's crumb once baked.
The step that matters
Folding the whites into the yolk mixture. Whites hold air only while whole; overmixing or stirring vigorously deflates the foam, leaving a dense cake. Fold gently so the batter stays light.
