Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Bacon Pasties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pastry

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, rub the fat into the flour until crumbly.

  3. Add enough water to form a paste, then roll it out.

  4. Cut out circles using a clean saucepan lid.

Fill and bake

  1. Sprinkle pepper on the bacon pieces.

  2. Place 2-3 pieces of bacon, some chopped potatoes, and onions on each circle.

  3. Fold the circles over to close the pasties.

  4. Bake for about 45 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the pastry structure that holds the filling while baking.
Fat (butter or lard)
Rubbed into flour to make the pastry short and crumbly rather than tough.
Bacon
Provides fat and savoury flavour that renders into the filling as it cooks.
Potatoes
Make up the bulk of the filling and cook through to a soft, moist texture.
Onion
Adds sweetness and aroma as it softens and cooks in the filling.

The step that matters

Close the pasties securely. If the edges are not sealed well, juices and fat can leak out during baking, leaving the filling dry and the pastry soggy or burnt on the tray.

Swap the onion

How well each one fits the dish's main ingredients (potato, flour, pepper, butter):

  1. Chivefits better
  2. Spinachfits better
  3. Capsicumfits about as well
  4. Onionthe original

Fit is the average pairing score against potato, flour, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
