What each ingredient does

Green walnuts
Provide the main flavour and dark colour of the ketchup as they steep.
Vinegar
Acts as the preserving liquid and extracts flavour from the walnuts and spices.
Sea salt
Draws moisture out and helps preserve the mixture during the long steep.
Anchovies
Add savoury depth, adding umami to the finished sauce.
Eschalots
Add a sharp aromatic onion flavour that mellows during steeping.

The step that matters

Pour off the liquid gently from the sediment. Sediment left from steeping and boiling can cloud the ketchup and cause spoilage in storage. Pouring slowly keeps the settled solids behind so the bottled liquid stays clear.

Swap the mace

How well each one fits the dish's main ingredients (walnut, garlic, vinegar, pepper, clove):

  1. Allspicefits better
  2. Tarragonfits better
  3. Thymefits better
  4. Macethe original
