An Excellent Sponge Cake Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Slice the sponge cakes and place them in a well-buttered tart dish.

  2. Add the candied peel on top of the cakes.

Make the custard

  1. Whisk the eggs thoroughly.

  2. Stir in the boiling milk with dissolved sugar.

  3. Grate in the lemon rind and let the mixture cool slightly.

  4. Add the brandy while the mixture is still warm.

Assemble and bake

  1. Pour the mixture over the cakes and let it sit for 1 hour.

  2. Strain the clarified butter over the top.

  3. Sift powdered sugar thickly on top.

  4. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

What each ingredient does

Eggs
Bind the custard and set into a tender, sliceable pudding when baked.
Whole milk
Supplies the liquid that makes the custard soft and moist once baked.
Sponge cakes
Act as the absorbent base that soaks up the custard and holds the pudding's body.
Sugar
Sweetens the custard and helps the powdered sugar top brown in the oven.
Clarified butter
Adds richness and fat, giving a smooth, moist texture and savoury depth.
Brandy
Adds a warm aroma and flavour that complements the citrus and sponge.

The step that matters

Bake in a moderate oven at 350°F (175°C) for 30 minutes. Egg proteins set gently at moderate heat. Too much heat or too long in the oven makes the custard curdle, weep and turn rubbery.

Swap the orange

How well each one fits the dish's main ingredients (egg, milk, sugar, lemon, brandy, butter):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits about as well
  4. Orangethe original

Fit is the average pairing score against egg, milk, sugar, lemon, brandy, butter. Candidates are from the same food group and used in at least 100 recipes.
