Why it works: Ginger and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,038 recipes. Both carry estragole, which smells anise, licorice. The science ↓
To Pickle Walnuts
Ingredients
Directions
Brine the walnuts
Gather walnuts while they are still soft enough to be pierced with a pin.
Make brine with 6 ounces of salt dissolved in 2 quarts of water. Remove any scum from the surface of the brine.
Add walnuts to the brine and stir them twice daily. Change the brine every three days.
For immediate eating, leave walnuts in brine for 12 days; otherwise, drain and air dry until they turn black, about 12 hours.
Make the pickle
Prepare the pickle by boiling vinegar, 1 teaspoon salt, black pepper, ginger, mace, cloves, and mustard seed for 5 minutes.
Place walnuts in a stone jar and pour the hot pickle over them.
Store
Once the pickle is cold, cover the jar securely and store in a dry place.
Ensure walnuts are always covered with vinegar and boil any added vinegar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Walnuts
- Their soft, unripe flesh is pierced, brined, and air dried until black, forming the pickle's main substance.
- Vinegar
- Acidity preserves the walnuts and gives the pickle its sharp, tangy flavour.
- Coarse sea salt
- Salt draws out moisture and bitterness from the walnuts during brining.
- Mustard seed
- Adds a pungent, sharp aroma to the hot pickle liquid.
The step that matters
Keep walnuts fully covered with vinegar. Walnuts exposed to air can spoil and mould. Keeping them submerged in acidic vinegar limits microbial growth, so any added vinegar must be boiled first and the walnuts always kept under the liquid.
Swap the mace
How well each one fits the dish's main ingredients (walnut, vinegar, pepper, ginger, clove, onion, mustard):
- Allspicefits better
- Turmericfits better
- Cinnamonfits better
- Macethe original
Fit is the average pairing score against walnut, vinegar, pepper, ginger, clove, onion, mustard. Candidates are from the same food group and used in at least 100 recipes.
