Why it works: Nutmeg and pepper match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Forced Turkeys’ Eggs
Ingredients
Directions
Cook the eggs
Boil the turkey eggs gently in plenty of water for 20 minutes.
Once done, lift them into a large pan of cold water to cool, changing the water once or twice for faster cooling.
When completely cool, roll the eggs in a cloth, pressing lightly to clean them.
Make the filling
Halve the eggs evenly, carefully remove the yolks, and pound them in a mortar.
Mix in the butter, salt, nutmeg, and cayenne until well combined.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Turkey eggs
- Provide the main body of the dish, with the yolks forming a rich, set base once pounded.
- Butter
- Adds fat and moisture, giving the pounded yolks a smooth, spreadable texture.
The step that matters
Cooling the eggs completely. Eggs that are still warm will be hard to peel cleanly and the yolks may be crumbly or hard to separate. Changing the cold water helps the eggs cool quickly and evenly.
Swap the nutmeg
How well each one fits the dish's main ingredients (turkey, butter, pepper):
- Sagefits better
- Thymefits better
- Parsleyfits better
- Nutmegthe original
Fit is the average pairing score against turkey, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
