What each ingredient does

Milk
Forms the creamy base that the other ingredients are dissolved and suspended in.
Isinglass
Gelatin-like setting agent that firms the liquid into a molded dessert as it cools.
Sugar
Sweetens the dessert and balances the flavors of lemon, almond and brandy.
Cream
Adds richness and a smoother, softer texture to the finished dessert.
Bitter almonds
Contribute a distinctive nutty, almond aroma to the milk.
Brandy
Adds alcohol-based aroma and flavor to the finished dessert.

The step that matters

Stir gently until nearly cold before molding. If the mixture is still hot, the cream can separate and rise, and the set becomes uneven. Cooling it slowly while stirring keeps the cream evenly distributed. Adding brandy too early can also weaken the gel.

Swap the lemon

How well each one fits the dish's main ingredients (milk, almond, sugar, cream, brandy):

  3. Apricotfits better

Fit is the average pairing score against milk, almond, sugar, cream, brandy. Candidates are from the same food group and used in at least 100 recipes.
