Lemon Sponge, or Moulded Lemon Cream

Ingredients

Directions

Make the base

  1. Infuse the cream with the lemon rind or rasp the fruit with the sugar.

  2. Dissolve the isinglass in the mixture without boiling, keeping it near simmering until dissolved.

  3. Stir in the additional cream and strain the mixture into a deep bowl.

Set and turn out

  1. Once cold, gradually add the strained lemon juice while whisking continuously.

  2. When the mixture thickens, whisk lightly to a sponge and pour into an oiled mold.

  3. Dip the mold in hot water to loosen, then turn out the cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the cream into a firm, sliceable shape as it cools.
Cream
Adds richness and a smooth, soft texture to the set cream.
Sugar
Sweetens the cream and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright flavour that cuts through the richness of the cream.
Lemon rind
Contributes aromatic lemon oils that flavour the cream.

The step that matters

Dissolve the isinglass without boiling. Isinglass is a gelatine-like setting agent that can lose its setting power or cause the cream to separate if it boils, so the mixture should be kept just below simmering until fully dissolved.
