What each ingredient does

Turnips
Provide the main body of the soup, and browning in butter adds color and a sweeter, nutty flavor.
Butter
Frying in clarified butter browns the turnips and adds richness to the dish.
Sugar
Adds sweetness that balances the mild bitterness of turnips.
Consommé
Supplies the liquid base and savory flavor of the soup.

The step that matters

Frying the turnips until golden brown. Turnips fried in clarified butter brown through the Maillard reaction, which builds flavor. Clarified butter has no milk solids to burn, so it can reach browning heat without scorching. Drain them well so excess butter does not carry into the soup.

Swap the celery

How well each one fits the dish's main ingredients (turnip, butter, sugar):

  1. Cinnamonfits better
  2. Capersfits better
  3. Nutmegfits better
  4. Celerythe original

Fit is the average pairing score against turnip, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
