Ingredients

Directions

Cook the partridges

  1. Cut the partridges into small round pieces and lay them in a pan with clarified butter.

  2. Sprinkle a little coarse sea salt over the partridges and stir them over high heat for 1 minute.

  3. Drain off the butter and gently stir the partridges into the béchamel sauce.

Prepare the truffles

  1. In a small pan, gently cook the truffles with a bit of butter until the butter begins to fry.

  2. Add the consommé to the truffles and reduce it nearly completely.

Finish and serve

  1. Mix the truffles into the sauce with the partridges, making it very hot.

  2. Stir in the egg yolk and cream, then serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridges
Provide the main meat, cooked briefly so it stays tender in the sauce.
Béchamel sauce
Forms the creamy base that coats and holds the partridge and truffle pieces together.
Truffles
Add a concentrated, earthy aroma that flavours the whole sauce.
Egg yolk
Enriches and thickens the sauce, giving it a smooth, velvety texture.
Cream
Adds richness and moisture, softening the sauce's texture.

The step that matters

Stirring in the egg yolk and cream. Egg yolk thickens when heated, so the sauce can curdle or turn grainy if it boils after the yolk goes in. Keep the heat low and serve immediately.
