Paste for Rissoles

Ingredients

Directions

  1. On a clean surface, place 2 cups of flour and make a well in the center.

  2. Add 2 whole eggs, 1 egg yolk, 2 tablespoons of butter, ¼ teaspoon of coarse sea salt, and ⅓ cup of milk.

  3. Mix the ingredients well until combined.

  4. Roll out the dough as thin as possible, then work it over your hands to thin it further.

  5. Lay the rolled dough flat and shape your prepared meat into balls.

  6. Place the meat balls in a line on the dough, then fold the dough over them.

  7. Use a pastry cutter to cut them into half circles, pricking a hole in each.

  8. Fry the rissoles in hot lard until golden brown.
