Souffle a LA Heine

Ingredients

Directions

  1. Place the sliced French rolls in a saucepan with the ratafia biscuits, sugar, lemon peel, and butter.

  2. Pour boiling milk over the mixture, cover, and let it simmer until the bread absorbs the milk.

  3. Stir the mixture well with a wooden spoon, then add the egg yolks.

  4. Rub the mixture through a fine sieve, adding the thick boiling cream as you do.

  5. Return the mixture to the saucepan and warm it over low heat.

  6. Beat the 6 egg whites and the additional 3 egg whites until frothy.

  7. Gradually mix the beaten egg whites into the batter, along with a little orange-flower water.
