Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the liquid into a sliceable jelly as it cools.
Currant jelly
Adds pectin and concentrated fruit flavour, helping the jelly hold its shape and taste tart.
Fresh strawberries
Provide the main fruit flavour, colour and body of the jelly.
Lemon juice
Adds acidity that brightens the sweet strawberry flavour and balances the sugar.

The step that matters

Dissolve the isinglass without letting it congeal. Gelatin-type setting agents must fully dissolve in warm liquid before cooling; if they begin to clump or set early, the jelly will be grainy or unevenly firm.

Swap the currant

How well each one fits the dish's main ingredients (lemon, sugar, gelatin):
