Why it works: Lemon and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 53,532 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Lemon Wafers
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Squeeze the lemons into a large bowl.
Add enough double-refined pounded sugar to achieve a fine smooth thickness.
Mix in the egg white thoroughly with a wooden spoon.
Lay sheets of wafer paper on a baking sheet.
Place a spoonful of the mixture on each sheet and spread it evenly with a knife.
Cut the sheets into 8 to 12 pieces.
Bake and dry
Place them across a stick in a preheated oven at 400 °F (200 °C) until they start to curl.
Once half curled, remove them and set them upright in a sieve.
Leave them in the hot oven for one day to curl more.
Store
Store the finished wafers in a dry place.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lemons
- Supply the juice and zest that give the wafers their tart, bright flavour.
- Double-refined pounded sugar
- Adds sweetness and, as it dissolves, helps the mixture set into a crisp sheet.
- Egg white
- Binds the lemon mixture together so it spreads smoothly and holds its shape.
- Wafer paper
- Forms the thin edible base that carries the mixture while it bakes.
The step that matters
Removing the wafers at the half-curled stage. The sugar in the mixture darkens quickly in the oven and hardens as it cools. Removing the wafers when half curled lets them be shaped while still pliable, before they set brittle.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, egg):
- Vanillafits better
- Raisinfits about as well
- Lemonthe original
- Datesfits less well
Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
