Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apricots
Provide the main fruit flavour and body of the ice cream.
Syrup
Adds sweetness and helps soften the fruit as it simmers.
Cream
Adds fat, giving the ice cream a smooth, rich texture.
Apricot kernels
Add a subtle almond-like aroma to the apricot base.
Lemon juice
Adds acidity that brightens the fruit flavour.

The step that matters

Turning the pot while freezing. Constant turning and scraping keep ice crystals small, so the mixture freezes smooth and thick rather than icy and grainy.
