Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the rice and discard any floating grains.

  2. Drain the rice and place it in a pie dish.

Assemble and bake

  1. Pour the skim milk over the rice.

  2. Add the cinnamon or lemon rind and the butter.

  3. Do not stir the pudding.

  4. Bake in a 350°F (175°C) oven for about 1.5 hours, until it has a bright brown skin.

What each ingredient does

Rice
Starch that softens and thickens the milk as it bakes into a pudding.
Skim milk
Liquid that cooks the rice and sets into a creamy custard-like texture.
Butter
Adds fat for richness and a smoother mouthfeel in the baked pudding.

The step that matters

Do not stir the pudding. Stirring during baking breaks up the skin forming on top and disturbs the slow setting of the milk and rice, leading to a grainier, less even texture.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
