Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the main fruit body and tartness that the sugar balances in the jam.
Loaf sugar
Sweetens the jam and, with boiling, helps it thicken and set.
Butter
Adds fat that helps reduce foaming during the boil.
Sweet almonds
Contribute nutty flavour and a little texture to the jam.

The step that matters

Boil quickly until a small amount sets on a plate. Boiling too gently leaves the jam runny, while overcooking makes it stiff. Pectin and sugar set as water evaporates, so the plate test shows when the jam has reached a set point.
