  1. Thicken the stock by boiling it with corn flour mixed with a little cold water.

  2. Add sugar browning and sherry to the thickened stock.

  3. Grease a plain tin mould and line it with greased paper.

  4. Mix the yolk of an egg with the preparation, then fold in the beaten egg white.

  5. Pour the mixture into the mould and steam for 1.5 hours.

  6. Turn the gateau onto a dish and pour the gravy around it before serving.
