Meat Pudding
Ingredients
Directions
Boil a large saucepan of water.
Chop the suet finely and sprinkle with a little flour to prevent sticking.
In a bowl, mix the flour, baking powder, and salt.
Rub the chopped suet into the flour until there are no lumps.
Gradually add about ½ cup of cold water to form a paste, mixing well.
Mix salt and pepper on a plate.
Slice the buttock steak into pieces about 3 inches long and 2 inches wide, removing any skin.
Slice the bullock's kidney.
Dip each slice of meat and kidney into the seasoning mixture.
Grease a quart basin well with dripping.
Roll out the paste and sprinkle a little flour on the board to prevent sticking.
