Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Puff Paste
Ingredients
Directions
Place the butter on a clean cloth.
Fold the cloth over the butter and squeeze to remove excess water.
Heap the flour on a board and make a well in the center.
Add salt, lemon juice, and enough water to achieve a paste consistency similar to the butter.
Flour a rolling pin and the board to prevent sticking.
Roll out the paste to about ¼ inch thick.
Place the butter on one half of the paste and fold the other half over it, pressing the edges together.
Let it rest on a plate in a cool place for 15 minutes.
Roll out the paste again and fold it into thirds.
Turn it so the rough edges face you.
Roll it out again and fold it into thirds.
Let it rest for another 15 minutes.
Repeat the rolling and folding process one more time.
