  1. Wash and scrape the carrots clean with a knife.

  2. Grate the carrots into a basin.

  3. Stand a wire sieve over a plate.

  4. Rub the bread through the sieve to obtain about 3 oz of bread crumbs.

  5. Add the bread crumbs and 1 oz of castor sugar to the basin with the grated carrots.

Make the custard

  1. Melt 2 oz of butter in a saucepan over low heat.

  2. Remove the saucepan from the heat and let it cool slightly.

  3. Stir in ⅓ cup of sherry, ½ cup of cream, and 1 tablespoon of orange flower water into the melted butter.

  4. Add the yolks of 2 eggs to the mixture.

  5. Whip the egg whites to stiff peaks and gently fold them into the mixture.

  6. Pour the mixture into the basin with the carrots and bread crumbs, and mix well.

Bake

  1. Line a 1‑pint pie dish with puff paste.

  2. Pour the pudding mixture into the lined pie dish and bake.

What each ingredient does

Carrots
Grated carrots form the bulk of the pudding and give it body and sweetness.
Bread crumbs
Absorb liquid and help bind the grated carrots into a soft, set pudding.
Eggs
Yolks enrich and bind the custard, while whipped whites lighten the texture and help it rise.
Butter
Adds richness and fat, giving the pudding a tender, moist crumb.
Cream
Adds moisture and richness, softening the texture of the pudding.
Castor sugar
Sweetens the pudding and helps brown its surface during baking.

The step that matters

Folding in the whipped egg whites. Whites lose their air if overmixed or deflated, so fold gently and briefly to keep the pudding light rather than dense.

Swap the carrot
