Why it works: Biscuit and angelica share more aroma than cooks usually use. They rank in the top 4% of all ingredient pairs, and cooks put them together in 69 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Cold Cabinet Pudding
Ingredients
Directions
Decorate the bottom of a pint mold with dried cherries and pieces of angelica.
Split the sponge biscuits in half and line the sides of the mold with them and the ratafias, alternating their positions.
In a bowl, beat the egg yolks with a wooden spoon until well mixed.
Stir in ½ pint of milk and pour the mixture into a jug.
Fill a saucepan halfway with hot water and bring it to a boil, then move it to the side of the heat.
Place the jug in the saucepan and stir the mixture until it thickens to a creamy consistency, ensuring it does not boil.
In a small saucepan, combine 1 oz. of gelatine with 1 tablespoon of water and heat gently until melted.
Once the custard thickens, remove the jug from the saucepan and let it cool.
