Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the pulp into a firm, sliceable gel as it cools.
Peaches
Provide the main fruit flavour and the pulp that gives body to the gel.
Sugar
Sweetens the fruit and balances the acidity of the lemon.

The step that matters

Rub the mixture through a fine sieve. Straining removes fibres and skins so the set gelatine is smooth and clear. Lumps or skins left in the pulp will show as specks in the finished gel.

Swap the lemon

How well each one fits the dish's main ingredients (peach, sugar):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits better
  4. Lemonthe original

Fit is the average pairing score against peach, sugar. Candidates are from the same food group and used in at least 100 recipes.
