Roast Grouse

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Let the grouse hang for some time, then pluck and draw without washing.

  2. Stuff the grouse, truss it like a fowl.

  3. Roast in a hot oven at 400°F (200°C) for about 40 minutes, basting well.

  4. Remove the string and place the bird on a slice of buttered toast.

  5. Serve with bread sauce.
