Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice base

  1. Mix the ground rice smoothly with a little cold milk.

  2. Simmer the remaining milk with the lemon rind for a few minutes, then strain.

  3. Stir in the ground rice and boil gently until thick.

  4. Add the sugar and let cool.

Bake

  1. Stir in the brandy, butter, and beaten eggs.

  2. Pour into a greased dish and bake at 350°F (175°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Thickens the milk as it boils, giving the pudding its body and creamy texture.
Eggs
Set during baking, firming the pudding and adding richness and structure.
Butter
Adds fat for a softer mouthfeel and richer flavour.
Sugar
Sweetens the pudding and adds to its soft texture.
Milk
Forms the liquid base that the ground rice thickens into a custard-like pudding.

The step that matters

Boil the ground rice gently until thick. Ground rice must be fully cooked in the milk to swell and thicken; under-cooking leaves a starchy, grainy texture, while boiling too hard can scorch the milk on the bottom of the pan.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, butter, sugar, egg, brandy):

  3. Coconutfits better
  4. Lemonthe original

Fit is the average pairing score against rice, milk, butter, sugar, egg, brandy. Candidates are from the same food group and used in at least 100 recipes.
