Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Mocha Cake
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
Beat the egg yolks with the sugar until well combined.
Gradually add the flour, stirring gently.
Fold in the whipped egg whites and cornflour carefully.
Pour the mixture into a plain mold and bake for about 30 minutes.
Once done, turn the cake out and let it cool completely.
Cover the cooled cake with Mocha icing and decorate as desired using a piping bag.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
