Directions

Assemble the pudding

  1. Butter a basin and line it with the suet crust.

  2. Add a layer of small pieces of steak rolled in flour, pepper, and salt.

  3. Next, add a layer of kidneys prepared the same way.

  4. Then, add the cleaned larks, oysters, and mushrooms.

  5. Fill with the remaining steak and kidneys.

  6. Pour in enough stock to fill the basin without overflowing.

  7. Cover with the crust, tie it up, and boil for 6 hours.

  1. When serving, remove the pudding cloth and wrap a serviette around the basin.

  2. Have hot stock ready to fill the pudding when cut.

What each ingredient does

Suet crust
Forms the sealed outer casing that holds the filling together while it boils.
Rump steak
Provides the main meaty body of the filling, becoming tender during long simmering.
Sheep's kidneys
Adds a rich, strong meaty flavour and some body to the filling.
Oysters
Contribute a briny, savoury flavour that seasons the filling as it cooks.
Stock
Supplies moisture so the filling stays juicy and forms a savoury gravy.

The step that matters

Boil for 6 hours. The pudding must simmer steadily for the full time so the tough steak becomes tender. Letting the water boil dry or the basin overflow can spoil the crust and filling.
