Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Chop the potatoes, turnip, celery, onion, parsley, and sweet herbs.

  3. In a bowl, combine the chopped vegetables with coarse sea salt and butter.

Assemble and bake

  1. Roll out the pastry dough thinly and cut it into squares.

  2. Place a spoonful of the vegetable mixture on each square.

  3. Wet the edges of the pastry, fold it over the filling, and seal it like a sausage roll.

  4. Bake for about 30 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the soft, moist filling.
Butter
Adds richness and moisture to the vegetable filling.
Onion
Contributes aroma and savory sweetness as it softens.
Pastry dough
Forms a golden, crisp outer case that holds the filling.

The step that matters

Sealing the pastry edges. Wet edges must be pressed firmly together so the filling does not leak out during baking. Moisture from the vegetables can otherwise cause a weak seal to open and the filling to escape.

Swap the onion

How well each one fits the dish's main ingredients (potato, turnip, celery, parsley, butter):
