Directions

Make the gelatine base

  1. In a saucepan, simmer the gelatine, lemon juice, lemon zest, and sugar in 2 cups of water until the gelatine is completely dissolved.

  2. Remove the lemon zest and let the mixture cool slightly.

Fold and set

  1. Whisk the egg whites in a bowl until they are stiff and frothy.

  2. Fold the egg whites into the cooled gelatine mixture until it appears spongy.

  3. Pour the mixture into a wet mold and refrigerate until set, or serve in rough lumps in a glass dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly structure as it cools.
Eggs
Whipped whites trap air, giving the dessert its light, spongy texture.
Sugar
Adds sweetness and balances the sharpness of the lemon.
Lemons
Provide the acidic, aromatic flavour from juice and zest.

The step that matters

Folding the egg whites into the cooled gelatine. If the gelatine is still hot, it can deflate the whipped whites; if it has begun to set, the mixture may stay lumpy. Cooling it slightly keeps the foam airy while it sets.
