Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the bulk and tart flavour of the jam as it breaks down.
Loaf sugar
Sweetens the jam and helps preserve it by drawing out moisture.
Lemon rind
Adds aromatic citrus oil and a bright note to the rhubarb.

The step that matters

Stirring while the sugar dissolves. Sugar on the bottom of the pan can scorch before the rest dissolves, so stirring gently over low heat until the sugar melts prevents burning and off flavours.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
