Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the main body of the dish, holding their shape when cut into quarters.
Milk
Forms the liquid base of the sauce that coats the eggs.
Butter
Adds richness and fat, giving the sauce a smooth, rounded flavour.
Wheatmeal
Thickens the milk into a sauce when whisked in and heated.

The step that matters

Whisk the wheatmeal in smoothly. Wheatmeal added to hot liquid without first being smoothed in cold milk clumps into lumps. Mixing it into cold milk first lets the starch disperse evenly, so the sauce thickens smoothly.

Swap the parsley

How well each one fits the dish's main ingredients (egg, milk, butter, nutmeg, pepper):

  1. Cinnamonfits better
  2. Parsleythe original
  3. Cardamomfits about as well
  4. Allspicefits about as well

Fit is the average pairing score against egg, milk, butter, nutmeg, pepper. Candidates are from the same food group and used in at least 100 recipes.
