Bird-nest Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apples

  1. Pare and core the apples.

  2. Boil the apples in 1 pint of water with 2 oz of sugar and the lemon rind until they begin to soften.

  3. Remove the apples from the saucepan and place them in a pie dish without the syrup.

Make the custard and bake

  1. Heat the milk and make a custard by mixing the well-beaten eggs with the hot milk.

  2. Sweeten and flavor the custard to taste, then pour it over the apples.

  3. Bake the pudding at 350°F (175°C) until the custard is set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Hold their shape while softening and provide the fruity base of the pudding.
Eggs
Set the custard into a firm, tender layer when baked.
Milk
Forms the liquid base of the custard, giving it richness and a soft texture.
Sugar
Sweetens the apples and the custard.

The step that matters

Baking until the custard is set. Egg proteins coagulate as the custard heats, so pulling the pudding too early leaves it runny, while overbaking can make it grainy or watery. Checking for a set centre helps avoid both.

Swap the apple

How well each one fits the dish's main ingredients (egg, milk, sugar, lemon, almond):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against egg, milk, sugar, lemon, almond. Candidates are from the same food group and used in at least 100 recipes.
