Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wholemeal bread
Forms the layered structure that the custard soaks into and holds together.
Eggs
Set when steamed, binding the custard so the pudding holds its shape.
Milk
Provides the liquid that softens the bread and forms the custard.
Orange marmalade
Adds sweetness, citrus acidity and aroma between the bread layers.
Butter
Adds richness and fat, carrying flavour through the bread layers.

The step that matters

Cover the mold tightly and steam the pudding for 1½ hours. A tight cover traps steam so the pudding cooks gently and evenly. Eggs set gradually in moist heat, which keeps the custard smooth rather than rubbery or curdled.

Swap the orange
