Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Soak the tapioca

  1. Soak the tapioca in cold water for 1 hour until it absorbs all the water.

Make the pudding

  1. Add the milk and sugar to the soaked tapioca, bring to a boil, and simmer until soft and clear.

  2. Remove from heat and let cool slightly.

  3. Beat the egg and mix it well with the tapioca mixture.

Bake and serve

  1. Pour into a greased dish and bake at 350°F (175°C) until golden.

  2. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it soaks and simmers, thickening the pudding and giving it its soft, clear texture.
Egg
Sets during baking, binding the pudding and adding richness and structure.
Milk
Provides the liquid that cooks the tapioca and adds creaminess and body.
Moist sugar
Adds sweetness and a molasses note that helps the top brown during baking.

The step that matters

Simmering the tapioca. Tapioca must be simmered until its starch granules fully swell and turn soft and clear; undercooked tapioca stays chalky and firm. Letting it cool slightly before adding the beaten egg prevents the egg from scrambling in the hot mixture.
